Mayfest Drunk Food: Beergaritas & Lemon Cupcakes

This Friday marks the one-year anniversary of Chancy Nancy’s SU-exclusive 21+ kegger in Walnut Park. What better way to celebrate than with citrusy, light cupcakes that taste like summer? Cook up a batch of Cupcake Queen’s Lemon Cupcakes before we drink up with the Chance yet again. When you stumble home after Block Party and find these puppies waiting on your kitchen table, you’ll be glad you thought ahead. Don’t forget to wash it down with a Beergarita.

Cupcake Ingredients: For the cake: 2 1/2 c. flour 2 1/2 sticks unsalted butter 2 1/2 c. sugar 5 eggs Zest of two medium lemons 1/2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 2 tsp. pure vanilla extract 2 tsp. lemon juice 1 c. buttermilk

For marshmallow frosting: 2 cups fluff 1 stick unsalted butter 5 tsp. lemon juice 1 ½ tsp. vanilla extract, to taste 4 tsp. Milk

Directions for cake: 1. Preheat oven at 325 degrees Fahrenheit. 2. Sift or mix dry ingredients and set aside. 3. In a large mixing bowl, combine lemon zest and sugar until evenly moist. 4. Add softened butter to lemon sugar and beat with hand or electric mixer. 5. Add eggs, one at a time, mixing each before adding the next. 6. Add vanilla and lemon juice. Mix for about 2 minutes until smooth and fluffy. 7. Add dry ingredients to the mixture and then add buttermilk. 8. Scoop even amounts of batter into lined muffin tin. 9. Bake for 18 to 22 minutes. Cupcakes are done when springy to the touch and not quite browned.

Directions for frosting: 1. With electric mixer, combine marshmallow fluff and softened butter. 2. Add the lemon juice and vanilla until well combined and fluffy. 3. Add milk by the teaspoon as needed until desired consistency.

Beergarita Ingredients: 3 coronas 18 oz. tequila 6 oz. orange juice 6 oz. lemonade

1. Combine ingredients and garnish with a lime wedge. 2. Optional margarita glasses with salted rim. 3. Consume kind of responsibly. After all, it’s Mayfest.
